Description

These delightful frosted sugar cookie muffins are perfect for any occasion!


Ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ½ cup granulated sugar
  • 1 cup frosted sugar cookie flavored creamer (like International Delight Frosted Sugar Cookie)
  • ¼ cup buttermilk
  • ¼ cup vegetable oil
  • 1 large egg
  • ½ teaspoon vanilla extract
  • ¾ cup powdered sugar
  • 23 tablespoons frosted sugar cookie flavored creamer
  • Sprinkles

Instructions

  1. Preheat oven to 350 F. Grease 36 mini muffin cups with nonstick cooking spray.
  2. In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
  3. In a separate large bowl, whisk together sugar, creamer, buttermilk, and vegetable oil until well-combined.
  4. Whisk in egg and vanilla.
  5. Add flour mixture, and whisk in until just combined.
  6. Divide the batter evenly among the prepared muffin cups.
  7. Bake for 10-15 minutes, or until muffins spring back when lightly touched.
  8. Let them cool in pan until room temperature.
  9. Once the donut muffins have cooled, stir together the powdered sugar and creamer until well-combined.
  10. Dip the tops of the cooled muffins in icing.
  11. Top with sprinkles.

  • These muffins are best enjoyed fresh but can be stored in an airtight container for a few days.
