Description

This Cherry Bundt Cake is moist, delicious, and perfect for any occasion.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 3/4 cup unsalted butter (softened)
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 cup fresh cherries (pitted and halved)
  • 1 cup powdered sugar
  • 2 tbsp unsweetened almond milk
  • 1/4 cup sliced almonds (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a bundt pan.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, cream softened butter and sugar until fluffy. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  4. Gradually mix dry ingredients into wet ingredients until just combined. Gently fold in fresh cherries.
  5. Pour batter into the prepared bundt pan and bake for 50–60 minutes or until a toothpick inserted comes out clean.
  6. Allow cooling for 10 minutes in the pan before transferring to a wire rack.
  7. For the glaze, whisk powdered sugar and almond milk until smooth; drizzle over cooled cake and top with sliced almonds if desired.

Notes

  • Make sure the butter is softened for easier creaming.
  • Cherries can be substituted with other fruits if desired.
