Cardamom Sugar Cookies

Description

Deliciously soft sugar cookies with a hint of cardamom.


Ingredients

Scale
  • 1 cup butter (melted)
  • 1½ cups brown sugar
  • 1 egg + 1 yolk
  • 1 tbsp vanilla extract
  • 1 tbsp milk
  • 2⅔ cups all-purpose flour
  • 1 tsp cornstarch
  • 1 tsp kosher salt
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/8 tsp ground cinnamon
  • 1/4 cup granulated sugar
  • 1/4 tsp ground cardamom

Instructions

  1. Preheat the oven to 350°F. Line two baking sheets with silicon mat or parchment paper.
  2. In a small bowl, combine the granulated sugar and cardamom.
  3. In a separate bowl, whisk together the flour, cornstarch, kosher salt, baking soda, baking powder, and cinnamon. Set aside.
  4. Cream together the butter and brown sugar in the bowl of a stand mixer using the paddle attachment on medium speed for 2–3 minutes, or until light and fluffy. It will be loose at first and thicken.
  5. Add in the egg, egg yolk, milk, and vanilla extract until smooth and fully incorporated, scraping down the sides of the bowl again as needed.
  6. Add half of the dry ingredients to the wet ingredients on low speed until just combined then add remaining dry mixture until a soft dough forms.
  7. Use a 2½ tablespoon cookie scoop to portion the dough in the size of a walnut. Roll each dough ball in the sugar-cardamom mixture to coat. Place on prepared baking sheets, spaced about 2-inches apart.
  8. Bake for 9 minutes, or until the edges are set and the centers still look slightly underbaked.
  9. Let cookies cool on the baking sheet for 5–10 minutes before transferring to a wire rack to cool completely.

  • These cookies can be stored in an airtight container.
  • For a variation, try adding chocolate chips or nuts to the dough.
