Description
Deliciously soft sugar cookies with a hint of cardamom.
Ingredients

- 1 cup butter (melted)
- 1½ cups brown sugar
- 1 egg + 1 yolk
- 1 tbsp vanilla extract
- 1 tbsp milk
- 2⅔ cups all-purpose flour
- 1 tsp cornstarch
- 1 tsp kosher salt
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/8 tsp ground cinnamon
- 1/4 cup granulated sugar
- 1/4 tsp ground cardamom
Instructions
- Preheat the oven to 350°F. Line two baking sheets with silicon mat or parchment paper.
- In a small bowl, combine the granulated sugar and cardamom.
- In a separate bowl, whisk together the flour, cornstarch, kosher salt, baking soda, baking powder, and cinnamon. Set aside.
- Cream together the butter and brown sugar in the bowl of a stand mixer using the paddle attachment on medium speed for 2–3 minutes, or until light and fluffy. It will be loose at first and thicken.
- Add in the egg, egg yolk, milk, and vanilla extract until smooth and fully incorporated, scraping down the sides of the bowl again as needed.
- Add half of the dry ingredients to the wet ingredients on low speed until just combined then add remaining dry mixture until a soft dough forms.
- Use a 2½ tablespoon cookie scoop to portion the dough in the size of a walnut. Roll each dough ball in the sugar-cardamom mixture to coat. Place on prepared baking sheets, spaced about 2-inches apart.
- Bake for 9 minutes, or until the edges are set and the centers still look slightly underbaked.
- Let cookies cool on the baking sheet for 5–10 minutes before transferring to a wire rack to cool completely.
Notes
- These cookies can be stored in an airtight container.
- For a variation, try adding chocolate chips or nuts to the dough.
