Description

Delicious muffins packed with fresh cranberries and dark chocolate.


Ingredients

  • 8 tablespoons (1 stick/ 113 grams) unsalted butter
  • 2/3 cup (130 grams) sugar
  • 2 large eggs
  • 1/2 teaspoon fresh orange zest
  • 1 1/4 cup (156 grams) all-purpose flour
  • 1 teaspoon baking powder
  • pinch of salt
  • 1/2 cup buttermilk (at room temperature)
  • 1 cup fresh cranberries
  • 1/2 cup dark chocolate chips

Instructions

  1. Preheat the oven to 400 and line 8 muffin cups with liners.
  2. In a small bowl, stir together the melted butter and sugar very well.
  3. Add the eggs and orange zest, and stir until it’s incorporated.
  4. Next, sprinkle the flour, baking powder and salt on top. Stir a few times, then add the buttermilk. Stir just until combined, do not over mix.
  5. Finally, stir in the cranberries and chocolate chips.
  6. Divide batter between the liners, and bake for 18-20 minutes, or until the tops spring back and a toothpick inserted comes out clean.
  7. Let cool for 5 minutes before serving.

Notes

  • For best results, use fresh cranberries.
  • Ensure the buttermilk is at room temperature for better mixing.
  • Do not over mix the batter to keep muffins light and fluffy.
