Description

Delicious ice cream sandwich cookies made with ginger and a molasses base.


Ingredients

Scale
  • 1 cup all-purpose flour
  • 2 tsp ground ginger
  • 1/2 cup unsulfured molasses
  • 1/2 cup brown sugar
  • 1/2 tsp baking soda
  • 1/2 cup softened butter (1 stick)
  • Ice cream of your choice (vanilla or cinnamon recommended)

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a bowl, whisk together flour, ground ginger, baking soda, and a pinch of salt. Set aside.
  3. In another bowl, cream together softened butter and brown sugar until fluffy. Add molasses and mix well.
  4. Gradually incorporate dry ingredients into the wet mixture until just combined. Chill dough in the fridge for 30 minutes.
  5. Scoop rounded tablespoons of dough onto prepared baking sheets, spacing them about two inches apart. Bake for 10-12 minutes until set but soft.
  6. Allow cookies to cool completely before sandwiching generous scoops of ice cream between two cookies.
