Description
Delicious ice cream sandwich cookies made with ginger and a molasses base.
Ingredients

- 1 cup all-purpose flour
- 2 tsp ground ginger
- 1/2 cup unsulfured molasses
- 1/2 cup brown sugar
- 1/2 tsp baking soda
- 1/2 cup softened butter (1 stick)
- Ice cream of your choice (vanilla or cinnamon recommended)
Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a bowl, whisk together flour, ground ginger, baking soda, and a pinch of salt. Set aside.
- In another bowl, cream together softened butter and brown sugar until fluffy. Add molasses and mix well.
- Gradually incorporate dry ingredients into the wet mixture until just combined. Chill dough in the fridge for 30 minutes.
- Scoop rounded tablespoons of dough onto prepared baking sheets, spacing them about two inches apart. Bake for 10-12 minutes until set but soft.
- Allow cookies to cool completely before sandwiching generous scoops of ice cream between two cookies.
Notes
- Cookies should be soft and chewy after baking.
- Experiment with different ice cream flavors for variety.
