Description

Ingredients

  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • 2 tsp baking powder
  • ¼ cup poppy seeds
  • Zest of 2 lemons
  • ½ cup freshly squeezed lemon juice
  • 3 large eggs
  • ½ cup whole milk
  • ⅓ cup vegetable oil
  • 1 tsp pure vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In one bowl, whisk together flour, sugar, baking powder, and poppy seeds.
  3. In another bowl, combine eggs, milk, oil, vanilla, lemon zest, and lemon juice until smooth.
  4. Gently fold the wet mixture into the dry ingredients until just combined.
  5. Pour the batter into the prepared loaf pan and smooth the top.
  6. Bake for 55-65 minutes or until golden brown and a toothpick inserted comes out clean.
  7. Allow cooling in the pan for 10 minutes before transferring to a wire rack.
