Ingredients

- 1 ½ cups all-purpose flour
- 1 cup granulated sugar
- 2 tsp baking powder
- ¼ cup poppy seeds
- Zest of 2 lemons
- ½ cup freshly squeezed lemon juice
- 3 large eggs
- ½ cup whole milk
- ⅓ cup vegetable oil
- 1 tsp pure vanilla extract
Instructions
- Preheat the oven to 350°F (175°C) and grease a loaf pan.
- In one bowl, whisk together flour, sugar, baking powder, and poppy seeds.
- In another bowl, combine eggs, milk, oil, vanilla, lemon zest, and lemon juice until smooth.
- Gently fold the wet mixture into the dry ingredients until just combined.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 55-65 minutes or until golden brown and a toothpick inserted comes out clean.
- Allow cooling in the pan for 10 minutes before transferring to a wire rack.
