Lemon Curd Cake Bars

Description

Delicious lemon curd cake bars made with a simple cake mix and topped with a sweet lemon curd.


Ingredients

Scale
  • 1 box cake mix (yellow or white, 15 oz)
  • 1 egg
  • 1/2 cup butter (melted)
  • 1 jar lemon curd (13 oz)
  • 1/4 cup powdered sugar

Instructions

  1. Preheat your oven to 350 degrees F.
  2. In a large bowl, stir together the cake mix, egg and melted butter.
  3. Press the batter evenly into the bottom of a 9×12 pan (lined with parchment paper).
  4. Spread the lemon curd over top.
  5. Bake for approximately 30-35 minutes, or until the edges are slightly brown.
  6. Remove from the oven and let cool completely before sprinkling on powdered sugar.

Notes

  • Make sure to let the bars cool completely for the best texture.
  • You can use any flavor of cake mix for a different twist.
