Deliciously tangy lemon bars with a buttery crust.

- 1/2 cup unsalted butter (room temperature)
- 1 cup all-purpose flour
- 1/4 cup powdered sugar
- 1/2 cup lemon juice (2–3 lemons)
- 1 tbsp lemon zest (finely grated)
- 3 large eggs (room temperature)
- 1 1/2 cups granulated sugar
- 1/2 cup all-purpose flour (sifted)
- Powdered sugar (for dusting)
Instructions
- Preheat your oven to 350°F (175°C) and grease your baking pan.
- In a mixing bowl, together butter, 1 cup flour, and 1/4 cup powdered sugar until it forms a soft dough.
- Press the mixture evenly into the bottom of your prepared baking pan.
- Bake for about 20 minutes until lightly golden.
- In another bowl, together the eggs, 1 1/2 cups granulated sugar, 1/2 cup lemon juice, 1 tbsp lemon zest, and 1/2 cup sifted flour.
- Pour the mixture over the baked crust and spread evenly.
- Bake for an additional 25–30 minutes, or until the filling is set.
- Let the bars cool in the pan for at least 10 minutes and then sprinkle with powdered sugar.
Notes
- These lemon bars can be refrigerated for up to a week.
- For best results, use freshly squeezed lemon juice.
