Description

Deliciously tangy lemon bars with a buttery crust.


Ingredients

  • 1/2 cup unsalted butter (room temperature)
  • 1 cup all-purpose flour
  • 1/4 cup powdered sugar
  • 1/2 cup lemon juice (23 lemons)
  • 1 tbsp lemon zest (finely grated)
  • 3 large eggs (room temperature)
  • 1 1/2 cups granulated sugar
  • 1/2 cup all-purpose flour (sifted)
  • Powdered sugar (for dusting)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your baking pan.
  2. In a mixing bowl, together butter, 1 cup flour, and 1/4 cup powdered sugar until it forms a soft dough.
  3. Press the mixture evenly into the bottom of your prepared baking pan.
  4. Bake for about 20 minutes until lightly golden.
  5. In another bowl, together the eggs, 1 1/2 cups granulated sugar, 1/2 cup lemon juice, 1 tbsp lemon zest, and 1/2 cup sifted flour.
  6. Pour the mixture over the baked crust and spread evenly.
  7. Bake for an additional 25–30 minutes, or until the filling is set.
  8. Let the bars cool in the pan for at least 10 minutes and then sprinkle with powdered sugar.

Notes

  • These lemon bars can be refrigerated for up to a week.
  • For best results, use freshly squeezed lemon juice.
