Description

A delicious and nutritious avocado toast topped with cottage cheese, cherry tomatoes, and fresh basil.


Ingredients

Scale
  • 1 slice sourdough bread
  • 1 small ripe avocado
  • 1/2 cup cottage cheese (see note 1)
  • to taste salt and pepper
  • 1 handful cherry tomatoes (halved)
  • 1 handful fresh basil (small or thinly sliced larger leaves)
  • to drizzle olive oil
  • to drizzle balsamic reduction

Instructions

  1. Toast sourdough bread and let it cool slightly.
  2. Thinly slice avocado and lightly mash it on toasted bread.
  3. Add a few spoonfuls of cottage cheese on top of the mashed avocado.
  4. Season with salt and pepper.
  5. Arrange halved cherry tomatoes and basil leaves over cottage cheese.
  6. Drizzle with olive oil and balsamic reduction.
  7. Enjoy promptly!
