Description

This air fryer salmon recipe features a delicious pistachio crust combined with fresh herbs and a creamy mayonnaise topping.


Ingredients

Scale
  • 1 spray olive oil cooking spray
  • 5 filets salmon, (about 5 ounces each)
  • 1 tablespoon all-purpose seasoning
  • 1/4 cup light mayonnaise
  • 4 leaves fresh mint, (minced)
  • 1 tablespoon fresh dill, (minced)
  • 2 tablespoons lemon juice, (about half a lemon)
  • 3/4 cup pistachios, (finely chopped)

Instructions

  1. Preheat air fryer to 400ºF and spray the basket with olive oil.
  2. Season the salmon with all-purpose seasoning.
  3. Combine mayonnaise with mint, dill, and lemon juice in a small bowl, then spoon a generous amount over each salmon filet.
  4. Top each filet with a heaping portion of chopped pistachios.
  5. Lightly spray the salmon with olive oil and air fry the filets for 6-8 minutes. If you’re using a larger piece of salmon, air fry it for additional time in 1 minute increments.
  6. Using a small spatula, carefully remove the salmon from the air fryer and plate.
  7. Garnish with fresh dill if desired.

Notes

  • Putting the salmon in the air fryer before dressing it saves on cleanup.
  • Air fryers cook things quickly, so monitor cooking times carefully.
