Description
This air fryer salmon recipe features a delicious pistachio crust combined with fresh herbs and a creamy mayonnaise topping.
Ingredients

- 1 spray olive oil cooking spray
- 5 filets salmon, (about 5 ounces each)
- 1 tablespoon all-purpose seasoning
- 1/4 cup light mayonnaise
- 4 leaves fresh mint, (minced)
- 1 tablespoon fresh dill, (minced)
- 2 tablespoons lemon juice, (about half a lemon)
- 3/4 cup pistachios, (finely chopped)
Instructions
- Preheat air fryer to 400ºF and spray the basket with olive oil.
- Season the salmon with all-purpose seasoning.
- Combine mayonnaise with mint, dill, and lemon juice in a small bowl, then spoon a generous amount over each salmon filet.
- Top each filet with a heaping portion of chopped pistachios.
- Lightly spray the salmon with olive oil and air fry the filets for 6-8 minutes. If you’re using a larger piece of salmon, air fry it for additional time in 1 minute increments.
- Using a small spatula, carefully remove the salmon from the air fryer and plate.
- Garnish with fresh dill if desired.
Notes
- Putting the salmon in the air fryer before dressing it saves on cleanup.
- Air fryers cook things quickly, so monitor cooking times carefully.
