Description
This delicious spice cake is moist and flavorful, made with applesauce and nuts.
Ingredients
Scale
- 1 box Spice Cake Mix (you don’t need the eggs, oil and water)
- 1 cup unsweetened applesauce
- 1/2 cup walnuts (or pecans chopped)
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- Milk of choice or heavy cream
- 1/2 cup roasted pecans (sea salt or sprinkles) – optional
Instructions
- Preheat the oven to 350 degrees and grease and flour a bundt pan or tube pan and set aside. I really like to use Baker’s Joy – it’s a grease and flour spray and it’s awesome, nothing ever sticks to the pan.
- Add all ingredients to a large mixing bowl and stir together with a fork.
- Put the batter into your prepared pan and then transfer to the oven.
- Bake for approximately 30-40 minutes until a toothpick inserted into the cake comes out clean.
- Remove the pan from the oven and let cool for 15-20 minutes, run a knife around all the edges and then place a plate or cake platter and flip so the cake is displayed on the plate. Slowly remove the pan from the cake.
- Once the cake has completely cooled, you can glaze or frost your cake or sprinkle with powdered sugar.
- In a medium-sized bowl, whisk together the powdered sugar, vanilla, and a teaspoon or tablespoon of milk/cream and keep adding if needed to get the consistency you need. If the icing is too thin, add some more powdered sugar.
- Drizzle on top of the cake. Let glaze set and serve.
Notes
- This cake is a great option for gatherings and can be decorated with additional nuts or sprinkles on top.
- The use of apple sauce makes it moist while keeping the preparation simple and quick.
