Description

Delicious banana fritters, fried to golden perfection and coated in a sweet glaze.


Ingredients

  • 2 eggs (room temperature)
  • 1/2 cup milk (room temperature)
  • 1 teaspoon vanilla
  • 1 tablespoon unsalted butter (melted)
  • 2 cups all-purpose flour
  • 3 teaspoons baking powder
  • 2 tablespoons brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 3 ripe bananas (chopped)
  • Vegetable or canola oil for frying
  • 1 1/4 cups powdered sugar
  • 34 tablespoons milk
  • 1/2 teaspoon vanilla
  • pinch of cinnamon (optional)

Instructions

  1. In a medium bowl, combine the eggs, milk, vanilla, and melted butter. Set aside.
  2. In a separate large bowl, whisk together the flour, baking powder, brown sugar, salt, and cinnamon.
  3. Add the egg mixture to the flour mixture, stirring until smooth.
  4. Fold in chopped bananas. Don’t overmix.
  5. Fill a Dutch oven/cast iron pot with at least 2 inches of vegetable oil and heat on medium-high; use a candy thermometer to know when it reaches 350°F.
  6. Using a tablespoon or a cookie scoop, dollop the batter into the oil, cooking 4-5 at a time. Cook the fritters, turning them over, for about 2 minutes per side for a total of about 3-4 minutes until deep golden brown. (To test for doneness, insert a toothpick into the center to see if it comes out clean.)
  7. Remove fritters from the oil with the spider tool and place them on a tray lined with paper towels.
  8. Make the glaze by combining powdered sugar, milk, and vanilla.
  9. Let the fritters cool slightly, then dip in the glaze. Serve warm.
