Ingredients

  • 3 cups powdered sugar
  • 2 teaspoons vanilla extract (for frosting)
  • 2 tablespoons blackberry puree
  • 2 tablespoons heavy cream
  • Fresh blackberries for garnish
  • Mint leaves for decoration (optional)

Instructions

  1. Preheat and Prepare: Preheat your oven to 350°F (175°C). Line a cupcake tin with paper liners.
  2. Make the Cupcake Batter: In a bowl, mix the flour, baking powder, and salt. In another bowl, beat the butter and sugar until light and fluffy. Add the eggs one at a time, mixing well after each. Stir in the vanilla extract. Gradually mix in the dry ingredients, alternating with milk, starting and ending with the flour mixture. Fold in a small amount of mashed blackberries if desired for added flavor.
  3. Bake the Cupcakes: Fill each cupcake liner two-thirds full with batter. Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted in the center comes out clean. Allow cupcakes to cool completely on a wire rack.
  4. Prepare the Frosting: In a large bowl, beat the butter until creamy. Gradually add the powdered sugar, mixing well. Stir in the vanilla extract and heavy cream. Separate the frosting into two halves. To half of the frosting, add the blackberry puree to achieve a light purple color.
  5. Decorate the Cupcakes: Use a piping bag to frost each cupcake with swirls of vanilla and blackberry frosting. Top each cupcake with fresh blackberries and mint leaves for garnish.
