Description
This moist and delicious banana bread is made with ripe bananas and brown sugar, topped with a salted caramel glaze.

- 1 1/2 cups mashed very ripe bananas (about 4 medium bananas)
- 1/2 cup unsalted butter
- 3/4 cup granulated sugar, plus more for topping
- 2 large eggs
- 1 tablespoon vanilla extract
- 1 teaspoon baking soda
- 1 teaspoon cinnamon, plus more for topping
- 1/2 teaspoon kosher salt
- 1 cup all-purpose flour
- 1/2 cup whole wheat flour
- 1/4 cup brown sugar
- 2 tablespoons unsalted butter (for browning)
- 2 tablespoons heavy whipping cream
- 6 tablespoons powdered sugar
- 1/4 plus 1/8 teaspoon kosher salt (for glaze)
Instructions
- Preheat oven to 350°F. Butter a 9 x 5 inch loaf pan (or 8 x 4 inch loaf pan).
- In a skillet over medium heat, melt the sliced butter until it turns foamy and golden brown, then remove from heat and let cool.
- Mash the bananas in a large bowl, measuring out 1 1/2 cups. Whisk in the sugar, eggs, and vanilla extract. Add the cooled browned butter.
- In another bowl, mix together the baking soda, cinnamon, kosher salt, all-purpose flour, and whole wheat flour. Add to the wet ingredients and stir.
- Pour the batter into the prepared loaf pan. In a small bowl, mix together 2 tablespoons granulated sugar and 1/2 teaspoon cinnamon and sprinkle over the top. Bake for 55 to 60 minutes, or until a toothpick comes out clean.
- Cool in the pan for 15 minutes, then run a knife around the edge and invert onto a cooling rack.
- For the optional salted caramel glaze, heat brown sugar and butter in a saucepan over medium heat, whisking until dissolved. Remove from heat and stir in whipping cream, then whisk in powdered sugar and salt until smooth.
- Drizzle the glaze over the cooled bread and allow it to set for 15 to 20 minutes. Slice and serve.
Notes
- The bread lasts 4 to 5 days at room temperature, 10 days in the refrigerator, or 3 months in the freezer (freezing without glaze).
