Description

This moist and delicious banana bread is made with ripe bananas and brown sugar, topped with a salted caramel glaze.


Ingredients

  • 1 1/2 cups mashed very ripe bananas (about 4 medium bananas)
  • 1/2 cup unsalted butter
  • 3/4 cup granulated sugar, plus more for topping
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon, plus more for topping
  • 1/2 teaspoon kosher salt
  • 1 cup all-purpose flour
  • 1/2 cup whole wheat flour
  • 1/4 cup brown sugar
  • 2 tablespoons unsalted butter (for browning)
  • 2 tablespoons heavy whipping cream
  • 6 tablespoons powdered sugar
  • 1/4 plus 1/8 teaspoon kosher salt (for glaze)

Instructions

  1. Preheat oven to 350°F. Butter a 9 x 5 inch loaf pan (or 8 x 4 inch loaf pan).
  2. In a skillet over medium heat, melt the sliced butter until it turns foamy and golden brown, then remove from heat and let cool.
  3. Mash the bananas in a large bowl, measuring out 1 1/2 cups. Whisk in the sugar, eggs, and vanilla extract. Add the cooled browned butter.
  4. In another bowl, mix together the baking soda, cinnamon, kosher salt, all-purpose flour, and whole wheat flour. Add to the wet ingredients and stir.
  5. Pour the batter into the prepared loaf pan. In a small bowl, mix together 2 tablespoons granulated sugar and 1/2 teaspoon cinnamon and sprinkle over the top. Bake for 55 to 60 minutes, or until a toothpick comes out clean.
  6. Cool in the pan for 15 minutes, then run a knife around the edge and invert onto a cooling rack.
  7. For the optional salted caramel glaze, heat brown sugar and butter in a saucepan over medium heat, whisking until dissolved. Remove from heat and stir in whipping cream, then whisk in powdered sugar and salt until smooth.
  8. Drizzle the glaze over the cooled bread and allow it to set for 15 to 20 minutes. Slice and serve.

  • The bread lasts 4 to 5 days at room temperature, 10 days in the refrigerator, or 3 months in the freezer (freezing without glaze).
