Ingredients

- 1 cup unsalted butter, softened
- 1 cup brown sugar
- 1/4 cup granulated sugar
- 1 large egg
- 2 teaspoons vanilla extract
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 18 soft caramel candies
Instructions
- Cream together softened unsalted butter, brown sugar, and granulated sugar until light and fluffy.
- Add the egg and vanilla extract and mix until well combined.
- In a separate bowl, whisk together flour, baking soda, salt, and cinnamon.
- Slowly add the dry ingredients to the wet mixture, mixing just until combined.
- Chill the dough for 30 minutes to firm it up.
- Scoop 1 tablespoon of dough, flatten it in your palm, and place a caramel candy in the center. Wrap the dough around the caramel and seal it completely.
- Place the cookie balls seam-side down on a baking sheet lined with parchment paper.
- Bake at 350°F (175°C) for 9 to 11 minutes or until edges are golden and centers are soft.
- Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack.
- Serve warm or store in an airtight container at room temperature.
Notes
- For extra flavor, add a pinch of sea salt on top of the cookies before baking.
