Description

Soft and chewy cookies filled with creamy caramel that are sure to delight!


Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 18 soft caramel candies

Instructions

  1. Cream together softened unsalted butter, brown sugar, and granulated sugar until light and fluffy.
  2. Add the egg and vanilla extract and mix until well combined.
  3. In a separate bowl, whisk together flour, baking soda, salt, and cinnamon.
  4. Slowly add the dry ingredients to the wet mixture, mixing just until combined.
  5. Chill the dough for 30 minutes to firm it up.
  6. Scoop 1 tablespoon of dough, flatten it in your palm, and place a caramel candy in the center. Wrap the dough around the caramel and seal it completely.
  7. Place the cookie balls seam-side down on a baking sheet lined with parchment paper.
  8. Bake at 350°F (175°C) for 9 to 11 minutes or until edges are golden and centers are soft.
  9. Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack.
  10. Serve warm or store in an airtight container at room temperature.

Notes

  • For extra flavor, add a pinch of sea salt on top of the cookies before baking.
