- 1 cup honey
- 1 unbaked pie crust (store-bought or homemade)
- 3 large eggs
- 1 cup heavy cream
- ½ cup whole milk
- ½ teaspoon vanilla extract
- ¼ teaspoon salt
- 1 tablespoon cornstarch
- 2 tablespoons unsalted butter, melted
Instructions
- Start by preheating your oven to 350°F (175°C).
- In a saucepan, heat the honey over medium heat. Stir occasionally until it becomes dark and fragrant (around 5-7 minutes). Be careful not to burn it!
- While the honey is cooking, place your unbaked pie crust into a pie dish and set it aside.
- In a large bowl, whisk together the eggs, heavy cream, whole milk, vanilla extract, salt, and melted butter until smooth.
- Allow the burnt honey to cool slightly, then gradually whisk it into the cream mixture until fully incorporated.
- Sprinkle the cornstarch into the mixture and whisk until well combined.
- Pour the filling into the prepared pie crust, smoothing the top with a spatula.
- Place in the preheated oven and bake for 40-45 minutes or until the filling is set but slightly jiggly in the center.
- Remove from the oven and let it cool at room temperature for at least 30 minutes, then refrigerate for an additional 30-45 minutes before serving.

- Ensure the honey does not burn while heating it.
- This pie can be served chilled or at room temperature.
