  • 1 unbaked pie crust (store-bought or homemade)
  • 3 large eggs
  • 1 cup heavy cream
  • ½ cup whole milk
  • ½ teaspoon vanilla extract
  • ¼ teaspoon salt
  • 1 tablespoon cornstarch
  • 2 tablespoons unsalted butter, melted

Instructions

  1. Start by preheating your oven to 350°F (175°C).
  2. In a saucepan, heat the honey over medium heat. Stir occasionally until it becomes dark and fragrant (around 5-7 minutes). Be careful not to burn it!
  3. While the honey is cooking, place your unbaked pie crust into a pie dish and set it aside.
  4. In a large bowl, whisk together the eggs, heavy cream, whole milk, vanilla extract, salt, and melted butter until smooth.
  5. Allow the burnt honey to cool slightly, then gradually whisk it into the cream mixture until fully incorporated.
  6. Sprinkle the cornstarch into the mixture and whisk until well combined.
  7. Pour the filling into the prepared pie crust, smoothing the top with a spatula.
  8. Place in the preheated oven and bake for 40-45 minutes or until the filling is set but slightly jiggly in the center.
