Instructions

  2. Mix the Base: In a large mixing bowl, combine the cooked rice, shredded chicken, black beans, and corn. Stir everything together so the ingredients are evenly distributed.
  3. Add Flavor: Pour in the red enchilada sauce and sprinkle in the cumin, chili powder, garlic powder, salt, and pepper. Mix well until all the rice and chicken are coated in the sauce.
  4. Layer the Cheese: Fold in half of the shredded cheddar and Monterey Jack cheese. This helps bind the casserole together and adds that irresistible melty texture inside.
