Description

A quick and delicious chicken ramen stir fry packed with veggies and flavor.


Ingredients

  • 3 packs instant ramen noodles (discard seasoning packets)
  • 1 lb boneless skinless chicken breast, cut into bite-sized pieces
  • 1 tablespoon sesame oil
  • 1 tablespoon vegetable oil
  • 3 tablespoons low sodium soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon hoisin sauce
  • 1 tablespoon sriracha (optional, for spice)
  • 2 teaspoons cornstarch
  • 1/2 cup chicken broth
  • 1 red bell pepper, thinly sliced
  • 1 cup broccoli florets
  • 2 cloves garlic, minced
  • 2 green onions, chopped (for garnish)
  • Sesame seeds (optional, for garnish)

Instructions

  1. Cook the Ramen: Bring a medium pot of water to a boil. Add ramen noodles (without the seasoning packets) and cook for 2–3 minutes until just tender. Drain and set aside.
  2. Make the Stir Fry Sauce: In a small bowl, whisk together the soy sauce, brown sugar, hoisin sauce, sriracha (if using), cornstarch, and chicken broth. This sauce will become thick and glossy as it cooks — just the way you want it.
  3. Sauté the Chicken: Heat the sesame oil and vegetable oil in a large skillet or wok over medium-high heat. Add the chicken pieces and cook until golden and cooked through, about 5–6 minutes.
  4. Add Veggies & Garlic: Toss in the broccoli, red bell pepper, and garlic. Stir-fry for about 3–4 minutes until veggies are slightly tender but still crisp.
  5. Combine Everything: Add the cooked ramen noodles and sauce to the skillet. Toss everything together until the sauce coats the noodles and everything is heated through — about 2–3 minutes.
  6. Garnish and Serve: Sprinkle with chopped green onions and sesame seeds if desired. Serve hot, straight from the skillet or in deep bowls.
