- Preheat your oven to 350°F (175°C).
- Grease and flour two 9-inch round cake pans.
- Prepare the Cake Batter:
- In a large mixing bowl, combine the flour, cocoa powder, sugar, baking powder, baking soda, and salt.
- Add the eggs, milk, oil, and vanilla extract. Beat on medium speed for about 2 minutes until well combined.
- Stir in the boiling water until the batter is smooth (it will be thin).
- Bake the Cake:
- Pour the batter evenly into the prepared cake pans.
- Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
- Cool the cakes in the pans for 10 minutes, then remove them from the pans to cool completely on wire racks.
- Prepare the Frosting:
- In a large mixing bowl, whip the heavy cream until stiff peaks form.
- Gently fold in 2 cups of the crushed chocolate sandwich cookies into the whipped cream.
- Assemble the Cake:
- Place one cake layer on a serving plate.
- Spread a layer of cookies and cream frosting over the cake.
- Place the second layer on top and spread the remaining frosting over the top and sides of the cake.
- Decorate the Cake:
- Press white chocolate pieces, whole chocolate sandwich cookies, and chocolate candies around the cake.
- Sprinkle the top with remaining crushed chocolate sandwich cookies for garnish.
Notes
- Ensure your cakes are completely cooled before frosting to prevent the frosting from melting.
- For extra flavor, consider adding a layer of chocolate ganache between the cake layers.
- Make sure the whipped cream is very cold before whipping to ensure it thickens properly.
- Use a serrated knife to level the cake layers for a more professional look.
