  • 1/2 teaspoon vanilla extract

Instructions

  1. Prepare the Oven and Muffin Liners: Preheat the oven to 350°F (175°C). Line a muffin pan with cupcake liners.

  2. Make the Red Velvet Batter: In a large bowl, whisk together flour, sugar, cocoa powder, baking soda, and salt. In another bowl, mix together the vegetable oil, buttermilk, egg, red food coloring, vanilla extract, and vinegar. Combine the wet and dry ingredients, mixing until smooth and well combined.

  3. Prepare the Cream Cheese Filling: In a medium bowl, beat together cream cheese, sugar, egg yolk, and vanilla extract until smooth and creamy.

  4. Assemble the Cupcakes: Fill each cupcake liner two-thirds full with red velvet batter. Add a spoonful of cream cheese filling into the center of each cupcake.

  5. Bake: Bake in preheated oven for 18-22 minutes, or until a toothpick inserted in the red velvet part comes out clean. Remove from oven and let them cool in the pan for a few minutes. Then transfer to a wire rack to cool completely.
