- 1 cup unsalted butter, softened
- 2 cups all-purpose flour
- 1/2 cup powdered sugar
- 4 large eggs
- 1 1/2 cups granulated sugar
- 1/4 cup all-purpose flour
- 2/3 cup freshly squeezed lemon juice
- Zest of 1 lemon
- A pinch of salt
Instructions
- Preheat and Prepare: Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.
- Make the Crust:
- In a medium bowl, mix 1 cup of softened butter, 2 cups of flour, and 1/2 cup of powdered sugar until a dough forms.
- Press this mixture into the bottom of the greased baking dish to form an even crust.
- Bake for 18-20 minutes or until lightly golden.
- Prepare the Lemon Filling:
- In a large bowl, whisk together 4 eggs and 1 1/2 cups of granulated sugar until well combined and slightly frothy.
- Add 1/4 cup of flour, 2/3 cup of lemon juice, lemon zest, and a pinch of salt. Mix until smooth.
- Assemble and Bake:
- Pour the lemon filling over the pre-baked crust.
- Return to the oven and bake for an additional 20-25 minutes or until the filling is set and doesn’t jiggle in the center.
- Cool and Serve:
- Allow the bars to cool at room temperature, then refrigerate for at least 2 hours.
- Slice into squares and serve chilled.
Notes
- For a more intense lemon flavor, add extra lemon zest.
- Ensure bars are well chilled before slicing for cleaner cuts.
- Dust with powdered sugar before serving for added sweetness and presentation.
- Store in an airtight container in the refrigerator for up to 5 days.
