Ingredients

  • 1 1/2 cups granulated sugar

  • 2/3 cup freshly squeezed lemon juice
  • Zest of 1 lemon
  • A pinch of salt

Instructions

  1. Preheat and Prepare: Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. Make the Crust:
    • In a medium bowl, mix 1 cup of softened butter, 2 cups of flour, and 1/2 cup of powdered sugar until a dough forms.
    • Press this mixture into the bottom of the greased baking dish to form an even crust.
    • Bake for 18-20 minutes or until lightly golden.
  3. Prepare the Lemon Filling:
    • In a large bowl, whisk together 4 eggs and 1 1/2 cups of granulated sugar until well combined and slightly frothy.
    • Add 1/4 cup of flour, 2/3 cup of lemon juice, lemon zest, and a pinch of salt. Mix until smooth.
  4. Assemble and Bake:
    • Pour the lemon filling over the pre-baked crust.
    • Return to the oven and bake for an additional 20-25 minutes or until the filling is set and doesn’t jiggle in the center.
  5. Cool and Serve:
    • Allow the bars to cool at room temperature, then refrigerate for at least 2 hours.
    • Slice into squares and serve chilled.
