Gnocchi in Tomato Cream Sauce

Description

A delicious gnocchi dish featuring a creamy tomato sauce with garlic, basil, and a hint of spice.


Ingredients

  • 1/4 cup Extra-Virgin Olive Oil
  • 8 cloves Garlic (minced)
  • 1 can (28-ounce) Whole Tomatoes
  • 1 teaspoon Salt
  • 1/2 teaspoon Salt
  • 1/2 to 1 teaspoon Red Pepper Flakes
  • 2/3 cup Heavy Cream
  • 2 packages (16-ounce) Gnocchi
  • 1/3 cup Fresh Basil Leaves (chopped)
  • 8 ounces Fresh Burrata or Fresh Mozzarella
  • 1/2 cup Parmigiano Reggiano Cheese
  • 1 cup Baby Spinach

Instructions

  1. Start by heating a large skillet over medium heat. Add olive oil.
  2. Add garlic and cook for 1 minute. Don’t cook too long or the garlic will burn. Before you add the garlic, have the tomatoes ready to add.
  3. Add the tomatoes, salt, pepper, and red pepper flakes. Break up the whole tomatoes with a spoon or with kitchen shears. You can also puree the tomatoes in a blender before adding if you desire a completely smooth sauce.
  4. While the sauce is simmering, heat a large pot filled with water over high heat until boiling. Generously salt the water. Add the gnocchi and cook according to package instructions (about two minutes). Remove about 2/3 cup of pasta water to add to the tomato sauce. Drain the pasta and set aside.
  5. Add about 1/2 to 2/3 cup of reserved pasta water to the sauce. Once the sauce has simmered for about 10-15 minutes, pour in heavy cream. Add in fresh basil leaves. Taste for seasonings.
  6. Add in gnocchi and fold together so it is completely covered in sauce. Sprinkle with freshly grated parmigiano reggiano or parmesan cheese, if using.
  7. Serve with fresh burrata cheese, torn into pieces on top of the gnocchi.

Notes

  • This dish can be served with additional grated cheese on top.
  • Adjust the amount of red pepper flakes to taste depending on your preferred spice level.
  • For a smoother sauce, blending the tomatoes before adding is recommended.
