- 4 medium Yukon gold or red potatoes
- 2 tablespoons chaat masala
- 1 teaspoon kosher salt
- ¼ cup fresh cilantro, chopped
- Juice of 1 lemon
Instructions
- Wash and peel the potatoes, then cut them into bite-sized cubes.
- Boil the potato cubes in salted water for 10-12 minutes until fork-tender.
- Drain and let the potatoes dry for 5 minutes.
- In a bowl, combine chaat masala, salt, and drained potatoes. Add lemon juice and toss until well-coated.
- Heat oil in a frying pan over medium heat. Fry potato cubes in batches until golden brown and crispy (about 5-7 minutes).
- Garnish with cilantro and serve immediately with lemon wedges.

- Make sure to dry the potatoes well after boiling for a crispier texture.
- Adjust the quantity of chaat masala according to taste preference.
