- 1 cup pumpkin seeds (freshly harvested or store-bought)
- 2 tsp olive oil
- 1 tsp sea salt
- ½ tsp cayenne pepper (adjust to taste)
- ½ tsp garlic powder
- ½ tsp paprika
Instructions
- Preheat your oven to 350°F (175°C).
- Rinse the pumpkin seeds under cold water and pat them dry with a towel.
- In a bowl, combine the seeds with olive oil, salt, cayenne pepper, garlic powder, and paprika. Mix until well coated.
- Spread the seasoned seeds evenly on a parchment-lined baking sheet.
- Roast for 20-25 minutes, stirring halfway through until golden brown and fragrant.
- Allow to cool slightly before serving.
