- 4 cups fresh spinach
- 1 can (14 oz) diced tomatoes in juice
- 1 medium onion, diced
- 4 cloves garlic, minced
- 1 can (13 oz) coconut milk
- 2 tbsp vegetable oil
- 1 tsp cumin
- 1 tsp paprika
- Salt to taste
Instructions
- Heat vegetable oil in a large pot over medium heat. Sauté diced onion until translucent (about 5 minutes), then add minced garlic and sauté for another minute.
- Stir in canned tomatoes with their juice and simmer for 5 minutes.
- Gradually add fresh spinach, stirring until wilted (around 3 minutes).
- Pour in coconut milk and stir to combine.
- Sprinkle in spices—cumin, paprika, and salt—mix well, and let simmer on low heat for about 10 minutes.
- Serve hot with rice or bread.
