Description

Ingredients

  • 4 cups fresh spinach
  • 1 can (14 oz) diced tomatoes in juice
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 1 can (13 oz) coconut milk
  • 2 tbsp vegetable oil
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt to taste

Instructions

  1. Heat vegetable oil in a large pot over medium heat. Sauté diced onion until translucent (about 5 minutes), then add minced garlic and sauté for another minute.
  2. Stir in canned tomatoes with their juice and simmer for 5 minutes.
  3. Gradually add fresh spinach, stirring until wilted (around 3 minutes).
  4. Pour in coconut milk and stir to combine.
  5. Sprinkle in spices—cumin, paprika, and salt—mix well, and let simmer on low heat for about 10 minutes.
  6. Serve hot with rice or bread.
