Instructions

  1. Prep the Potatoes: Start by peeling and chopping your potatoes into small, even cubes—about 1/2 inch in size. This ensures they cook evenly and get those irresistibly crispy edges.
  2. Parboil for Perfect Texture: Bring a pot of salted water to a boil and add the cubed potatoes. Let them parboil for about 5 minutes until just tender, then drain and let them sit for a few minutes to release steam. This step helps reduce moisture so they crisp up nicely in the pan.
  3. Sauté the Onion: In a large skillet (cast iron works best), heat olive oil over medium heat. Add the diced onion and cook for 3–4 minutes until soft and fragrant.
  4. Add the Potatoes: Spread the parboiled potatoes into the skillet in an even layer. Resist the urge to stir too often—let them sit undisturbed for 4–5 minutes to form a crispy crust.
  5. Season & Crisp: Sprinkle in the smoked paprika, garlic powder, salt, and pepper. Stir to coat evenly, then continue cooking, stirring occasionally, for another 10–12 minutes until golden and crispy on all sides.
  6. Garnish & Serve: Remove from heat, sprinkle with fresh parsley if desired, and serve immediately. They pair perfectly with eggs, turkey ham, or sautéed greens.
