Instructions
- Prep the Potatoes: Start by peeling and chopping your potatoes into small, even cubes—about 1/2 inch in size. This ensures they cook evenly and get those irresistibly crispy edges.
- Parboil for Perfect Texture: Bring a pot of salted water to a boil and add the cubed potatoes. Let them parboil for about 5 minutes until just tender, then drain and let them sit for a few minutes to release steam. This step helps reduce moisture so they crisp up nicely in the pan.
- Sauté the Onion: In a large skillet (cast iron works best), heat olive oil over medium heat. Add the diced onion and cook for 3–4 minutes until soft and fragrant.
- Add the Potatoes: Spread the parboiled potatoes into the skillet in an even layer. Resist the urge to stir too often—let them sit undisturbed for 4–5 minutes to form a crispy crust.
- Season & Crisp: Sprinkle in the smoked paprika, garlic powder, salt, and pepper. Stir to coat evenly, then continue cooking, stirring occasionally, for another 10–12 minutes until golden and crispy on all sides.
- Garnish & Serve: Remove from heat, sprinkle with fresh parsley if desired, and serve immediately. They pair perfectly with eggs, turkey ham, or sautéed greens.
