Cajun Rice with Sausage and Prawns

Description

A hearty Cajun rice dish featuring andouille sausage, chicken, and prawns, seasoned to perfection.


Ingredients

  • 12 oz Andouille Sausage
  • 1 lb Boneless Chicken Thighs
  • 8 oz Raw Prawns
  • 1 medium Onion
  • 1 medium Green Bell Pepper
  • 2 stalks Celery
  • 3 cloves Garlic
  • 1 medium Tomato
  • 2 cups Long Grain White Rice
  • 4 cups Chicken Stock
  • 14 oz Canned Chopped Tomatoes
  • 2 tbsp Tomato Paste
  • 1 tbsp Smoked Paprika
  • 1 tsp Dried Thyme
  • 1 tsp Dried Oregano
  • 1/2 tsp Cayenne Pepper
  • 2 tbsp Vegetable Oil

Instructions

  1. Prep Ingredients by chopping all vegetables and proteins and placing in separate bowls.
  2. Rinse the Rice under cold water until it runs clear.
  3. Marinate Chicken with spices for at least 15 minutes.
  4. Sear Sausage in a pot until browned, about 5-7 minutes.
  5. Brown Chicken in the same pot for about 5-6 minutes.
  6. Cook Veggies: add onion, bell pepper, and celery; sauté for 5-6 minutes, then add garlic and tomato.
  7. Add Tomato Paste and seasoning blend; cook until fragrant.
  8. Incorporate Meats & Rice: return sausage and chicken, then add rinsed rice; stir lightly.
  9. Simmer with Stock: pour in chicken stock and canned tomatoes, bring to simmer, then cover and cook low for 20 minutes.
  10. Add Prawns on top, cover, and cook for an additional 5-7 minutes.
  11. Fluff and Serve, letting it sit covered for 5 minutes.

Notes

  • This dish can be adjusted for spice by varying the cayenne pepper.
  • For a vegetarian option, substitute sausage and chicken with plant-based alternatives.
