  • 2 tablespoons lemon juice
  • 4 tablespoons apricot jam
  • 1 tablespoon water
  • 1/4 teaspoon ground cinnamon
  • Powdered sugar (optional, for dusting)

Instructions

  1. Prepare Apples:
    • Cut apples in half and remove the core.
    • Slice the apples very thinly (about 1/8 inch).
    • Place apple slices in a bowl with lemon juice and enough water to cover them. Microwave for about 3 minutes, until the slices are soft and pliable.
  2. Prepare Jam Mixture:
    • In a small bowl, mix the apricot jam with a tablespoon of water.
    • Microwave for about a minute to make it easier to spread.
  3. Prepare Puff Pastry:
    • Roll out the puff pastry sheet into a rectangle. The pastry should be about 12 inches long and 9 inches wide.
    • Cut the pastry into 6 strips.
  4. Assemble Tarts:
    • Spread a thin layer of the apricot jam on each strip.
    • Place apple slices along one lengthwise half of the pastry, overlapping slightly, with the skin side facing out of the pastry.
    • Sprinkle lightly with cinnamon.
    • Fold up the bottom of the pastry to enclose the apples, creating a long strip.
    • Carefully roll each strip, starting from one end, to form a rose shape.
    • Tuck the end of the pastry strip underneath to secure.
  5. Bake:
    • Preheat oven to 375°F (190°C).
    • Place rolled tarts in a muffin pan to maintain shape.
    • Bake for about 40-45 minutes, until the pastry is golden and cooked through.
