Description

Delicious crispy shrimp spring rolls filled with marinated shrimp and fried to perfection.


Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1 tablespoon soy sauce
  • 1 tablespoon fish sauce
  • 2 teaspoons cornstarch
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon chili paste or sriracha (adjust to taste)
  • 1 tablespoon fresh cilantro, chopped
  • 810 spring roll wrappers or wonton wrappers
  • Cooking oil for frying
  • Lime wedges for serving
  • Sweet chili sauce for dipping

Instructions

  1. In a medium bowl, combine the shrimp, soy sauce, fish sauce, cornstarch, garlic, ginger, chili paste, and cilantro. Mix well. Marinate for at least 15 minutes.
  2. While the shrimp marinate, lay out the spring roll or wonton wrappers on a clean surface. If using spring roll wrappers, soak them in warm water for about 10 seconds until pliable.
  3. Place a spoonful of the marinated shrimp mixture in the center of each wrapper. Do not overfill.
  4. Fold the sides inward and roll tightly from the bottom to the top, sealing the edges with a bit of water to ensure they stay closed.
  5. In a deep frying pan or a wok, heat enough oil for shallow frying over medium-high heat.
  6. Once the oil is hot, carefully place a few wrapped shrimp in the oil, being mindful not to overcrowd the pan. Fry until golden brown and crispy, about 2-3 minutes on each side.
  7. Use a slotted spoon to remove the wrappers from the oil and place them on a plate lined with paper towels to drain off excess oil.
  8. Repeat the frying process with the remaining wrappers until all are cooked.
  9. Once all pieces are crispy and golden, arrange them on a serving tray.

  • Ensure not to overfill the wrappers to prevent them from bursting during frying.
  • Adjust the amount of chili paste or sriracha based on your spice preference.
