Description
Delicious crispy shrimp spring rolls filled with marinated shrimp and fried to perfection.
Ingredients
Scale
- 1 pound large shrimp, peeled and deveined
- 1 tablespoon soy sauce
- 1 tablespoon fish sauce
- 2 teaspoons cornstarch
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 teaspoon chili paste or sriracha (adjust to taste)
- 1 tablespoon fresh cilantro, chopped
- 8–10 spring roll wrappers or wonton wrappers
- Cooking oil for frying
- Lime wedges for serving
- Sweet chili sauce for dipping
Instructions
- In a medium bowl, combine the shrimp, soy sauce, fish sauce, cornstarch, garlic, ginger, chili paste, and cilantro. Mix well. Marinate for at least 15 minutes.
- While the shrimp marinate, lay out the spring roll or wonton wrappers on a clean surface. If using spring roll wrappers, soak them in warm water for about 10 seconds until pliable.
- Place a spoonful of the marinated shrimp mixture in the center of each wrapper. Do not overfill.
- Fold the sides inward and roll tightly from the bottom to the top, sealing the edges with a bit of water to ensure they stay closed.
- In a deep frying pan or a wok, heat enough oil for shallow frying over medium-high heat.
- Once the oil is hot, carefully place a few wrapped shrimp in the oil, being mindful not to overcrowd the pan. Fry until golden brown and crispy, about 2-3 minutes on each side.
- Use a slotted spoon to remove the wrappers from the oil and place them on a plate lined with paper towels to drain off excess oil.
- Repeat the frying process with the remaining wrappers until all are cooked.
- Once all pieces are crispy and golden, arrange them on a serving tray.
Notes
- Ensure not to overfill the wrappers to prevent them from bursting during frying.
- Adjust the amount of chili paste or sriracha based on your spice preference.
- For best results, fry in batches to maintain oil temperature.
