Description
Enjoy your fluffy strawberry pancake stack!
Ingredients
Scale
- 1 cup all-purpose flour
- 2 tablespoons granulated sugar
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 cup milk
- 1 large egg
- 2 tablespoons unsalted butter, melted
- 1 teaspoon vanilla extract
- 1 cup fresh strawberries, sliced
- 1 tablespoon sugar
- Whipped cream (optional, for topping)
- Maple syrup (optional, for drizzling)
Instructions
- Prepare Strawberry Topping:
- In a small bowl, combine the sliced strawberries and 1 tablespoon sugar.
- Let the mixture sit for 10-15 minutes to macerate, allowing the strawberries to release their juices.
- Make Pancake Batter:
- In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
- In another bowl, beat the egg and mix in the milk, melted butter, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; the batter should be slightly lumpy.
- Cook Pancakes:
- Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil.
- Pour 1/4 cup of batter onto the skillet for each pancake.
- Cook until bubbles form on the surface, about 2-3 minutes. Then flip and cook for another 1-2 minutes, until golden brown.
- Repeat with the remaining batter, adjusting the heat as necessary to prevent burning.
- Assemble Pancake Stack:
- Stack the pancakes on a serving plate.
- Spoon the macerated strawberries and their juices over the top of the pancake stack.
- Serve:
- Top with whipped cream and drizzle with maple syrup if desired.
- Serve immediately while warm.
Notes
- Ensure the skillet is properly heated before adding the batter to achieve a good rise and golden color.
- Do not press the pancakes down with a spatula while cooking; this will keep them fluffy.
- If you prefer a less sweet topping, adjust the sugar in the strawberries to taste.
- For extra flavor, consider adding a pinch of cinnamon to the batter.
