Description

A delicious and easy sauté combining fresh corn and crispy bacon.

Ingredients

Scale
  • 4 ears fresh corn, kernels removed
  • 6 slices bacon, diced
  • 1 small onion, finely chopped
  • 2 tablespoons unsalted butter
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Prepare the Ingredients:
    • Remove the corn kernels from the cob. Set aside.
    • Chop the bacon into small pieces.
    • Finely chop the onion and parsley.
  2. Cook the Bacon:
    • In a large skillet, cook the diced bacon over medium heat until it becomes crispy.
    • Remove the bacon and set aside, leaving the bacon fat in the skillet.
  3. Sauté the Onions:
    • Add the chopped onion to the skillet with the bacon fat.
    • Sauté for about 3 minutes until the onions become translucent.
  4. Cook the Corn:
    • Add the corn kernels to the skillet.
    • Stir in the unsalted butter.
    • Cook for about 5 minutes, stirring occasionally, until the corn is tender and lightly browned.
  5. Combine and Season:
    • Return the crispy bacon to the skillet and mix it with the corn and onions.
    • Season with salt and freshly ground black pepper to taste.
  6. Garnish and Serve:
    • Remove from heat and transfer to a serving dish.
    • Sprinkle with fresh parsley for a bright garnish.
    • Serve warm.

Notes

  • Freshness: Use fresh corn for best flavor, but frozen corn can be a substitute in a pinch.
  • Crispiness: For extra crunchy bacon, fry the pieces separately first and adjust the cook time based on your crispy preference.
  • Herbs: Feel free to add other herbs like thyme or basil for additional flavor.
  • Spice it up: Add a pinch of red pepper flakes for a spicy kick if desired.
