Description

A delicious recipe for halibut fillets cooked in a flavorful lemon butter sauce with mushrooms and capers.


Ingredients

  • 1 pound fresh halibut, skinned and cut into 2 portions
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 3/4 teaspoon kosher salt, divided
  • Black pepper, to taste
  • 45 lemon slices
  • 1 tablespoon butter
  • 6 ounces mushrooms, sliced
  • 3 teaspoons garlic, finely chopped
  • 1/2 cup low-sodium chicken broth
  • 3 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • 2 tablespoons capers, drained
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons butter (to finish the sauce)

Instructions

  1. Lightly season the halibut with some of the salt and set it aside while heating the skillet.
  2. Warm the olive oil and 2 tablespoons butter in a large skillet over medium heat. When the butter turns lightly golden, place the halibut in the pan, top-side down. Season the exposed surface with the remaining salt and black pepper. Cook without moving it for about 5 minutes, then gently flip.
  3. Nestle the lemon slices around the fish. Cook for another 3–5 minutes, or until the halibut flakes easily and is just slightly underdone in the center. Transfer the fish and lemon slices to a plate.
  4. Pour off excess fat, leaving about 2 tablespoons in the pan. Add 1 tablespoon butter and melt over medium heat. Add the mushrooms and cook until browned, about 4–6 minutes. Stir in the garlic and cook for 1 minute. Pour in the chicken broth and let it reduce slightly. Stir in the lemon juice, lemon zest, capers, and parsley. Remove from the heat and whisk in the final 2 tablespoons butter until smooth.
  5. Return the halibut and any juices to the pan. Spoon the sauce over the fish for 30–45 seconds over medium heat, then remove from the heat to keep the halibut tender.
  6. Serve each fillet topped with the mushroom-lemon-caper sauce and a cooked lemon slice.

Notes

  • This dish pairs well with rice or steamed vegetables.
  • For a slightly richer flavor, you can add more butter to the sauce.
