- 1 box (3 oz) pistachio pudding mix
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1 cup powdered sugar
- 1/2 cup chopped pistachios (for garnish)
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking pan.
- In a bowl, cream together butter and sugar until fluffy. Add eggs one at a time, mixing well after each addition.
- Sift in flour, pudding mix, and baking powder; mix until just combined.
- Spread the batter evenly into the prepared pan.
- In another bowl, beat cream cheese, remaining eggs, powdered sugar, and more pudding mix until smooth. Pour over the base layer without stirring.
- Bake for 40-45 minutes until golden around edges and slightly jiggly in the center.
- Cool completely before slicing.
