Description

Delicious roasted carrots tossed with browned butter, honey, and toasted pecans, perfect as a side dish.


Ingredients

  • 1 pound medium-sized carrots, peeled and cut into sticks
  • 4 tablespoons unsalted butter
  • 1/2 cup raw pecans, toasted
  • 2 tablespoons honey
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 tablespoon fresh thyme leaves (or rosemary)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a saucepan over medium heat, melt the unsalted butter, stirring until it turns golden brown and develops a nutty aroma (about 5 minutes).
  3. In a large bowl, toss the carrot sticks with the browned butter, honey, salt, pepper, and thyme until well-coated.
  4. Spread the carrots evenly on the baking sheet and roast for 25-30 minutes or until tender and caramelized.
  5. In the last five minutes of roasting, sprinkle the toasted pecans over the carrots to warm them through.
  6. Serve immediately, drizzling any remaining browned butter from the baking sheet over the top.

Notes

  • This recipe can also use rosemary instead of thyme for a different flavor.
  • For extra sweetness, drizzle more honey over the carrots before serving.
