Delicious roasted carrots tossed with browned butter, honey, and toasted pecans, perfect as a side dish.

- 1 pound medium-sized carrots, peeled and cut into sticks
- 4 tablespoons unsalted butter
- 1/2 cup raw pecans, toasted
- 2 tablespoons honey
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1 tablespoon fresh thyme leaves (or rosemary)
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a saucepan over medium heat, melt the unsalted butter, stirring until it turns golden brown and develops a nutty aroma (about 5 minutes).
- In a large bowl, toss the carrot sticks with the browned butter, honey, salt, pepper, and thyme until well-coated.
- Spread the carrots evenly on the baking sheet and roast for 25-30 minutes or until tender and caramelized.
- In the last five minutes of roasting, sprinkle the toasted pecans over the carrots to warm them through.
- Serve immediately, drizzling any remaining browned butter from the baking sheet over the top.
Notes
- This recipe can also use rosemary instead of thyme for a different flavor.
- For extra sweetness, drizzle more honey over the carrots before serving.
