Description

Delicious toasts topped with roasted butternut squash and sage-infused butter.


Ingredients

Scale
  • 2 cups butternut squash, peeled and diced
  • 1 French baguette, sliced into ½-inch pieces
  • 4 tbsp unsalted butter
  • 6 fresh sage leaves
  • 2 tbsp olive oil (for roasting and toasting)
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Toss butternut squash with olive oil, salt, and pepper; spread on the baking sheet. Roast for 25 minutes or until tender.
  3. While roasting, slice the baguette and arrange on another baking sheet. Drizzle with olive oil and toast in the oven for 8–10 minutes until golden brown.
  4. In a saucepan over medium heat, melt butter; add sage leaves. Cook until butter turns golden brown and smells nutty.
  5. Mash roasted squash in a bowl; mix in browned butter and sage leaves.
  6. Spread the mixture on toasted baguette slices, serve immediately.

Notes

  • For added flavor, use freshly cracked black pepper.
