Delicious toasts topped with roasted butternut squash and sage-infused butter.
Ingredients

- 2 cups butternut squash, peeled and diced
- 1 French baguette, sliced into ½-inch pieces
- 4 tbsp unsalted butter
- 6 fresh sage leaves
- 2 tbsp olive oil (for roasting and toasting)
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Toss butternut squash with olive oil, salt, and pepper; spread on the baking sheet. Roast for 25 minutes or until tender.
- While roasting, slice the baguette and arrange on another baking sheet. Drizzle with olive oil and toast in the oven for 8–10 minutes until golden brown.
- In a saucepan over medium heat, melt butter; add sage leaves. Cook until butter turns golden brown and smells nutty.
- Mash roasted squash in a bowl; mix in browned butter and sage leaves.
- Spread the mixture on toasted baguette slices, serve immediately.
Notes
- For added flavor, use freshly cracked black pepper.
- Serve warm for the best texture.
