Description

Delicious peppermint éclairs filled with whipped cream and topped with a rich chocolate frosting.

Ingredients

Scale
  • 0 cup Butter (Substitute with margarine for a dairy-free option.)
  • 1 cup Water (No substitutes recommended.)
  • 1 cup All-purpose Flour (Use a suitable blend for gluten-free.)
  • 4 Large Eggs (No direct substitutes recommended.)
  • 1 cup Heavy Cream (Use coconut cream for a dairy-free version.)
  • 1 teaspoon Peppermint Extract (Vanilla extract can be used for a classic alternative.)
  • 0 cup Confectioners’ Sugar (Optional for reduced sweetness.)
  • 0 cup Butter (Margarine can be used for a dairy-free alternative.)
  • 2 tablespoons Milk (A non-dairy alternative can be used.)
  • 0 cup Unsweetened Cocoa (No substitutes recommended.)
  • 2 cups Confectioners’ Sugar (Can be reduced for less sweetness.)
  • 0 cup Crushed Peppermints or Candy Canes (Chocolate shavings can be an alternative garnish.)

Instructions

  1. Preheat your oven to 400°F (200°C) and melt the butter in the water over medium heat until boiling. Add the sifted flour, stir into a dough ball, cool, then mix in the eggs until smooth.
  2. Line a baking sheet with parchment, pipe 3-inch strips of pastry, and bake for 25–30 minutes until golden brown. Cool and pierce to release steam.
  3. In a chilled bowl, whip the heavy cream, gradually adding sugar and peppermint extract until stiff peaks form. Fill each eclair with whipped cream.
  4. Melt the butter for frosting, mix in the milk, cocoa powder, and sugar until smooth. Dip eclair tops into frosting and allow excess to drip.
  5. Slice eclairs, pipe in the whipped cream, dip topped eclairs in frosting, and garnish with crushed peppermint right before serving.

Notes

  • For a dairy-free alternative, use margarine and coconut cream.
  • Ensure the oven is fully preheated to achieve the best results.
