A delightful and rich green tea mousse cake, ideal for special occasions.

Instructions
- Preheat the oven to 350°F (175°C). Grease and line an 8-inch round cake pan.
- Cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition.
- In a separate bowl, sift together flour, baking powder, and matcha.
- Gradually add the dry ingredients to the wet ingredients, alternating with milk. Mix until just combined.
- Pour the batter into the prepared pan and bake for 20-25 minutes or until a toothpick inserted comes out clean.
- Allow to cool completely.
- Sprinkle gelatin over water and let it bloom for 5 minutes.
- Whip the heavy cream with matcha and sugar until soft peaks form.
- Melt the gelatin over low heat until fully dissolved, allow to cool slightly, and then fold into the whipped cream.
- Spread the mousse evenly over the cooled cake base. Refrigerate for at least 2 hours until set.
- Heat cream over low heat, then pour over chopped white chocolate and matcha.
- Stir until the chocolate is melted and the mixture is smooth.
- Allow to cool slightly, then pour over the mousse layer. Let it drip over the edges for effect.

- Dust with extra matcha or powdered sugar if desired.
