Description

A delightful and rich green tea mousse cake, ideal for special occasions.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup butter, softened
  • 2 large eggs
  • 1/4 cup milk
  • 1 tsp baking powder
  • 1 tsp matcha (green tea powder)
  • 1 cup heavy cream
  • 2 tbsp matcha (green tea powder)
  • 1/4 cup sugar
  • 1 tbsp gelatin powder
  • 3 tbsp water
  • 1/2 cup white chocolate, melted
  • 1/4 cup heavy cream
  • 1 cup white chocolate, chopped
  • 1/4 cup heavy cream
  • 2 tsp matcha (green tea powder)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and line an 8-inch round cake pan.
  2. Cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition.
  3. In a separate bowl, sift together flour, baking powder, and matcha.
  4. Gradually add the dry ingredients to the wet ingredients, alternating with milk. Mix until just combined.
  5. Pour the batter into the prepared pan and bake for 20-25 minutes or until a toothpick inserted comes out clean.
  6. Allow to cool completely.
  7. Sprinkle gelatin over water and let it bloom for 5 minutes.
  8. Whip the heavy cream with matcha and sugar until soft peaks form.
  9. Melt the gelatin over low heat until fully dissolved, allow to cool slightly, and then fold into the whipped cream.
  10. Spread the mousse evenly over the cooled cake base. Refrigerate for at least 2 hours until set.
  11. Heat cream over low heat, then pour over chopped white chocolate and matcha.
  12. Stir until the chocolate is melted and the mixture is smooth.
  13. Allow to cool slightly, then pour over the mousse layer. Let it drip over the edges for effect.
  14. Heat cream and pour over chopped white chocolate and matcha. Stir until smooth. Chill the mixture until firm, then roll into small balls.
  15. Dust with extra matcha or powdered sugar if desired.
