- 1/4 teaspoon salt
- 1 cup buttermilk
- 1 large egg
- 2 tablespoons melted butter
- Cooking oil or additional butter for greasing the pan
- Maple syrup, for serving (optional)
Instructions
- Prepare the Sausages: Cook the sausage links in a skillet over medium heat until fully cooked, about 8-10 minutes. Set aside and keep warm.
- Make the Pancake Batter: In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. In a separate bowl, mix the buttermilk, egg, and melted butter until well combined. Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix; a few small lumps are okay.
- Cook the Pancakes: Heat a non-stick skillet or griddle over medium heat and lightly grease with cooking oil or butter. Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges appear set, about 2-3 minutes. Flip the pancake and cook for another 1-2 minutes until golden brown.
- Assemble the Rolls: Place one cooked sausage link on a pancake and roll it up. Repeat with the remaining sausages and pancakes.
- Serve: Serve warm, drizzled with maple syrup if desired.

- Ensure your skillet is properly heated before adding the pancake batter, as this will help the pancakes cook evenly and prevent sticking.
- If the batter thickens while standing, you can add a little milk to reach the desired consistency.
