Instructions

  1. Prepare the Sausages: Cook the sausage links in a skillet over medium heat until fully cooked, about 8-10 minutes. Set aside and keep warm.
  2. Make the Pancake Batter: In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. In a separate bowl, mix the buttermilk, egg, and melted butter until well combined. Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix; a few small lumps are okay.
  3. Cook the Pancakes: Heat a non-stick skillet or griddle over medium heat and lightly grease with cooking oil or butter. Pour about 1/4 cup of batter onto the skillet for each pancake.   4. Assemble the Rolls: Place one cooked sausage link on a pancake and roll it up. Repeat with the remaining sausages and pancakes.
