Description
Delicious pumpkin muffins topped with a crunchy streusel, perfect for breakfast or a snack!
Ingredients

- 1/3 cup brown sugar
- 1/3 cup granulated sugar
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 2 teaspoons baking powder
- 2 teaspoons cinnamon
- ½ teaspoon salt
- 1/2 cup butter (melted)
- 2 large eggs
- ¾ cup milk or buttermilk
- 1 teaspoon vanilla extract (if desired)
- 1 cup pumpkin puree
- Add-ins and flavorings of your choice
- 1/2 cup all-purpose flour
- 2 tablespoons brown sugar
- 1 1/2 tablespoons granulated sugar
- 1/8 teaspoon salt
- 1 teaspoon cinnamon
- 1/4 cup butter (melted)
Instructions
- Whisk together the flour, sugars, and cinnamon together. Add the melted butter and stir together. Mixture should look like wet sand and have lots of big chunks. Do not smooth out; place in fridge until ready to use. Set aside.
- Preheat oven to 375 degrees. Grease muffin pans or line with paper muffin liners.
- In a large bowl, stir together the brown sugar, white sugar, flour, baking powder, baking soda, salt, and spices.
- Add the melted butter, milk, eggs, pumpkin, and vanilla and mix until smooth.
- Spoon the batter into the prepared muffin pans. Cups should be at least 3/4 full.
- Sprinkle as much streusel as you want on top of the muffins.
- Bake for 15 to 20 minutes in the preheated oven or until a toothpick inserted into a muffin comes out clean.
Notes
- For extra flavor, consider adding chocolate chips or nuts to the batter.
- Store leftover muffins in an airtight container for up to 3 days.
