- 1 sheet of puff pastry, thawed
- 1 pound (450g) ground sausage (your choice of flavor)
- 1 small onion, finely chopped
- 1 tablespoon olive oil
- 1 egg, beaten
- 1 teaspoon dried thyme
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
Instructions
- Preheat the Oven: Preheat your oven to 400°F (200°C).
- Prepare the Sausage Filling: In a skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent. Remove from heat and let cool slightly. In a bowl, combine the ground sausage, sautéed onions, thyme, salt, and pepper. Mix well.
- Prepare the Puff Pastry: Roll out the puff pastry on a lightly floured surface. Cut the pastry into squares, approximately 3 inches by 3 inches.
- Assemble the Bites: Place a small amount of the sausage mixture in the center of each square. Fold the corners of the pastry over the sausage filling, pinching to seal. Place the bites on a baking sheet lined with parchment paper.
- Egg Wash: Brush the tops of the pastry with the beaten egg for a golden finish.
- Bake: Bake in the preheated oven for 15-20 minutes or until the pastry is golden brown and the sausage is cooked through.
- Serve: Allow to cool slightly before serving.

- Ensure the puff pastry is well thawed but kept cold to maintain its flakiness.
- If using pre-seasoned sausage, adjust the seasoning as needed.
- For extra flavor, consider adding a bit of grated cheese to the sausage mixture.
