A hearty and flavorful slow cooker chuck roast recipe that’s perfect for a comforting meal.

- 3 pounds chuck roast
- 3 large yellow onions, sliced
- 3 cups beef broth
- 2 tablespoons Worcestershire sauce
- 1 tablespoon balsamic vinegar
- 4 garlic cloves, minced
- 1 teaspoon dried thyme (or 2 teaspoons fresh thyme)
- 1 bay leaf
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
- 2 tablespoons butter
- 1 tablespoon all-purpose flour (optional)
Instructions
- Heat olive oil in a skillet over medium-high heat. Season the chuck roast with salt and pepper. Sear the roast on all sides until browned, about 3–4 minutes per side.
- In the same skillet, melt butter. Add sliced onions and cook over medium heat, stirring occasionally, until caramelized and golden, about 15–20 minutes.
- Transfer the onions to the slow cooker. Place the seared roast on top of the onions.
- Add garlic, thyme, bay leaf, Worcestershire sauce, balsamic vinegar, and beef broth to the slow cooker.
- Cover and cook on low for 8 hours or high for 4–5 hours, until the meat is fork-tender.
- Optional: To thicken the gravy, whisk 1 tablespoon of flour with 1/2 cup of the hot broth. Stir the mixture back into the slow cooker and cook on high for an additional 15 minutes.
- Remove the bay leaf, shred the beef if desired, and serve hot with mashed potatoes, noodles, or crusty bread.
Notes
- This recipe can be prepared the night before for an easy dinner solution.
- Leftover roast can be used in sandwiches or salads.
