Delicious chocolate cupcakes with a strawberry jam center and chocolate frosting.

- 1 1/2 cups all purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup granulated sugar
- 1 large egg
- 3/4 cup buttermilk
- 1/3 cup vegetable oil
- 1 teaspoon vanilla extract
- 3/4 cup hot water
- 1/2 cup strawberry jam
- 1 1/2 cups chocolate frosting
- 6 fresh strawberries (optional garnish)
Instructions
- Preheat oven to 350°F and line a 12 cup muffin tin with cupcake liners.
- Whisk flour, cocoa powder, baking soda, salt, and sugar in a large bowl.
- In another bowl, mix egg, buttermilk, vegetable oil, and vanilla extract.
- Pour wet ingredients into dry ingredients and stir until combined.
- Slowly mix in hot water until batter becomes smooth and slightly thin.
- Add one tablespoon of batter into each cupcake liner.
- Place one teaspoon of strawberry jam in the center of each cupcake.
- Cover jam with another tablespoon of batter.
- Bake for 18 to 20 minutes until a toothpick inserted near the edge comes out clean.
- Cool cupcakes completely before frosting.
- Frost cupcakes with chocolate frosting and garnish with strawberries if desired.

- Ensure the cupcakes are completely cool before frosting to prevent melting.
