Description

Delicious chocolate cupcakes with a strawberry jam center and chocolate frosting.


Ingredients

  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup granulated sugar
  • 1 large egg
  • 3/4 cup buttermilk
  • 1/3 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 3/4 cup hot water
  • 1/2 cup strawberry jam
  • 1 1/2 cups chocolate frosting
  • 6 fresh strawberries (optional garnish)

Instructions

  1. Preheat oven to 350°F and line a 12 cup muffin tin with cupcake liners.
  2. Whisk flour, cocoa powder, baking soda, salt, and sugar in a large bowl.
  3. In another bowl, mix egg, buttermilk, vegetable oil, and vanilla extract.
  4. Pour wet ingredients into dry ingredients and stir until combined.
  5. Slowly mix in hot water until batter becomes smooth and slightly thin.
  6. Add one tablespoon of batter into each cupcake liner.
  7. Place one teaspoon of strawberry jam in the center of each cupcake.
  8. Cover jam with another tablespoon of batter.
  9. Bake for 18 to 20 minutes until a toothpick inserted near the edge comes out clean.
  10. Cool cupcakes completely before frosting.
  11. Frost cupcakes with chocolate frosting and garnish with strawberries if desired.
