- 1 teaspoon baking powder
- ½ teaspoon salt
- 1 teaspoon cayenne pepper (adjust to taste)
- 1 unit jalapeño, finely chopped (optional, for extra spice)
- 1 cup shredded cheese (like cheddar or pepper jack)
- 2 units eggs
- ½ cup milk
- Oil for frying
Instructions
- In a large mixing bowl, combine the corn, flour, baking powder, salt, and cayenne pepper. If you like it spicy, toss in the chopped jalapeño!
- In another bowl, whisk together the eggs and milk. Pour the wet mixture into the dry ingredients and mix until just combined. Fold in the shredded cheese.
- Heat about ½ inch of oil in a frying pan over medium heat.
- Using a spoon, drop a generous spoonful of batter into the hot oil. Ensure to leave space between each one for frying.
- Cook the bites for 2-3 minutes on each side, or until they’re golden brown and crispy. Remove them with a slotted spoon and drain on paper towels.
