- Make Cream Cheese Filling: In a medium bowl, beat the cream cheese, powdered sugar, and 1 teaspoon vanilla extract until smooth. Chill in the refrigerator while preparing the cookie dough.
- Prepare Cookie Dough: In another bowl, whisk together the flour, baking powder, and salt. In a large mixing bowl, cream the softened butter and 1 cup sugar until light and fluffy. Beat in the egg and vanilla extract. Gradually add in the dry ingredients. Stir until just combined. Gently fold in the macerated strawberries.
- Assemble Cookies: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper. Using a tablespoon, scoop out cookie dough, flatten slightly, and place a teaspoon of cream cheese filling in the center. Wrap the dough around the filling, sealing it completely. Place the filled cookies onto the prepared baking sheet, leaving about 2 inches apart.
- Bake: Bake in the preheated oven for about 12-15 minutes or until the edges are slightly golden. Allow cooling on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
