Instructions

  1. Prepare Strawberries: In a small bowl, combine the diced strawberries with 1 tablespoon of sugar. Let sit for about 10 minutes to macerate.
  2. Make Cream Cheese Filling: In a medium bowl, beat the cream cheese, powdered sugar, and 1 teaspoon vanilla extract until smooth. Chill in the refrigerator while preparing the cookie dough.
  3. Prepare Cookie Dough: In another bowl, whisk together the flour, baking powder, and salt. In a large mixing bowl, cream the softened butter and 1 cup sugar until light and fluffy. Beat in the egg and vanilla extract. Gradually add in the dry ingredients. Stir until just combined. Gently fold in the macerated strawberries.
  4. Assemble Cookies: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
