- 1 box white cake mix (plus ingredients required on box: eggs, oil, water)
- 2 cups fresh strawberries, hulled and halved
- 1 cup strawberry preserves
- 1 packet strawberry-flavored gelatin
- 1 cup boiling water
- 1 cup cold water
- 2 cups heavy whipping cream
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Prepare the Cake Base: Preheat the oven to 350°F (175°C). Grease a 9×13 inch baking dish. Prepare the white cake mix according to the package instructions. Pour the batter into the prepared baking dish and bake for about 25-30 minutes or until a toothpick inserted in the center comes out clean. Allow the cake to cool completely.
- Make the Gelatin Layer: In a mixing bowl, dissolve the strawberry-flavored gelatin in boiling water. Stir in the cold water and mix until fully dissolved. Allow it to cool at room temperature.
- Prepare the Strawberry Mixture: Combine the fresh strawberries with the strawberry preserves. Set aside.
- Whip the Cream: In a large mixing bowl, whip the heavy cream until it begins to thicken. Add the powdered sugar and vanilla extract, and continue to whip until stiff peaks form.
- Assemble the Dessert: Once the cake has cooled, poke holes all over with a fork. Pour the cooled gelatin mixture evenly over the cake. Spread the strawberry mixture over the top. Evenly spread the whipped cream over the strawberry mixture. Refrigerate for at least 2-3 hours, allowing the flavors to meld together.
- Serving: Cut into squares and serve chilled.
Notes
- For added flavor, consider using almond extract instead of vanilla in the whipped cream.
- You can garnish with additional fresh strawberries or mint leaves for presentation.
- Ensure the gelatin sets slightly before pouring it over the cake to prevent it from making the cake too soggy.
