Description
A refreshing salad made with shredded green papaya, long beans, and a zesty dressing.
Ingredients
Scale
- 1/2 large green papaya, shredded or cut into matchsticks (6–7 cups)
- 2 garlic cloves
- 1 red Thai chili (or 2 for spicy)
- 1 cup fresh Chinese Long Beans or raw green beans, cut into 1-inch pieces
- 1 cup cherry tomatoes, halved
- 3 tablespoons brown sugar or palm sugar
- 3 tablespoons fish sauce
- 3 tablespoons lime juice or tamarind water
- 3 tablespoons water
- 1/4 cup roasted peanuts
Instructions
- Slice the green papaya in half, scoop out seeds with a spoon, and peel the skin off. Grate into small matchsticks and set aside.
- Mash two garlic cloves with 1-2 red Thai chilies and place them in a large bowl. Muddle the long beans (or green beans) in the same bowl. Add the halved cherry tomatoes and shredded papaya to the bowl.
- Make the dressing by mixing sugar, fish sauce, lime juice, and water in a small bowl.
- Pour the dressing over the salad, muddle and stir for about one minute. You can also use your hands and massage (use kitchen gloves).
- Add the roasted peanuts and toss.
Notes
- Ensure to use a ripe and green papaya for the best texture.
- Adjust the spiciness by varying the number of Thai chilies according to your taste.
- For a vegan version, substitute fish sauce with soy sauce.
