Ingredients

Scale
  • 4 cups fresh kale, chopped
  • 2 navel oranges, segmented
  • 2 tbsp freshly squeezed lemon juice

  • 1 tbsp honey
  • Salt and pepper to taste

Instructions

  1. Remove tough stems from kale leaves, wash thoroughly, and dry. Chop into bite-sized pieces.
  2. Segment oranges by cutting off the ends, peeling, and slicing between membranes over a bowl to catch juices.
  3. In a small bowl, whisk together lemon juice, olive oil, honey, salt, and pepper until smooth.
  4. Combine kale and orange segments in a large bowl. Drizzle with dressing and toss gently.
  5. Massage the kale for about two minutes to soften its texture.
  6. Serve immediately or let chill for 30 minutes before serving.
