A refreshing salad combining kale and juicy orange segments.
Ingredients
Scale
- 4 cups fresh kale, chopped
- 2 navel oranges, segmented
- 2 tbsp freshly squeezed lemon juice
- 3 tbsp extra virgin olive oil
- 1 tbsp honey
- Salt and pepper to taste
Instructions
- Remove tough stems from kale leaves, wash thoroughly, and dry. Chop into bite-sized pieces.
- Segment oranges by cutting off the ends, peeling, and slicing between membranes over a bowl to catch juices.
- In a small bowl, whisk together lemon juice, olive oil, honey, salt, and pepper until smooth.
- Combine kale and orange segments in a large bowl. Drizzle with dressing and toss gently.
- Massage the kale for about two minutes to soften its texture.
- Serve immediately or let chill for 30 minutes before serving.
Notes
- This salad is best served fresh but can be stored in the fridge for a short time.
- Adjust the sweetness by adding more or less honey according to taste.
