Description

A hearty and flavorful chicken chili made with boneless, skinless chicken breasts, beans, and spices.


Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 can (14 oz) diced green chiles
  • 1 can (15 oz) white beans, drained and rinsed
  • 4 cups chicken broth
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon cayenne pepper (adjust for spice level)
  • 1 cup frozen corn
  • ½ cup sour cream (or Greek yogurt)
  • 1 cup shredded Monterey Jack cheese
  • Fresh cilantro for garnish (optional)

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chicken breasts and cook until browned on both sides, about 5-7 minutes. Remove from pot and set aside to cool slightly.
  2. In the same pot, add the chopped onion and cook for 3-4 minutes until softened. Stir in the minced garlic and sauté for another minute.
  3. Stir in the ground cumin, chili powder, paprika, salt, black pepper, and cayenne pepper. Cook for an additional minute to toast the spices.
  4. Add the diced green chiles, white beans, chicken broth, and corn to the pot. Stir well to combine.
  5. While the chili is simmering, shred the chicken into bite-sized pieces. Return the shredded chicken back into the pot.
  6. Bring the mixture to a boil, then reduce the heat to low. Cover and allow it to simmer for 20 minutes, stirring occasionally.
  7. After simmering, stir in the sour cream and half of the shredded cheese until well combined. Cook for an additional 5 minutes to heat through.
  8. Taste the chili and adjust seasoning if necessary. Feel free to add more spices for extra heat.
  9. Serve hot, garnished with fresh cilantro and topped with the remaining shredded cheese.

  • This chili can be customized by adding more vegetables or different types of beans.
