A hearty and flavorful chicken chili made with boneless, skinless chicken breasts, beans, and spices.

- 1 pound boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 can (14 oz) diced green chiles
- 1 can (15 oz) white beans, drained and rinsed
- 4 cups chicken broth
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1 teaspoon paprika
- ½ teaspoon salt
- ½ teaspoon black pepper
- ¼ teaspoon cayenne pepper (adjust for spice level)
- 1 cup frozen corn
- ½ cup sour cream (or Greek yogurt)
- 1 cup shredded Monterey Jack cheese
- Fresh cilantro for garnish (optional)
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chicken breasts and cook until browned on both sides, about 5-7 minutes. Remove from pot and set aside to cool slightly.
- In the same pot, add the chopped onion and cook for 3-4 minutes until softened. Stir in the minced garlic and sauté for another minute.
- Stir in the ground cumin, chili powder, paprika, salt, black pepper, and cayenne pepper. Cook for an additional minute to toast the spices.
- Add the diced green chiles, white beans, chicken broth, and corn to the pot. Stir well to combine.
- While the chili is simmering, shred the chicken into bite-sized pieces. Return the shredded chicken back into the pot.
- Bring the mixture to a boil, then reduce the heat to low. Cover and allow it to simmer for 20 minutes, stirring occasionally.
- After simmering, stir in the sour cream and half of the shredded cheese until well combined. Cook for an additional 5 minutes to heat through.
- Taste the chili and adjust seasoning if necessary. Feel free to add more spices for extra heat.
- Serve hot, garnished with fresh cilantro and topped with the remaining shredded cheese.
Notes
- This chili can be customized by adding more vegetables or different types of beans.
- Adjusting the cayenne pepper will allow you to control the heat level.
